Marcel Ravin pays tribute to the sea
From his island origins - Marcel Ravin was born and raised in Martinique - the two-starred chef retains a deep respect for fishing and maritime culture. He has chosen to celebrate these through the Elsa’s menu, offering a veritable marine garden, where the delights of the sea harmonise with the treasures of the land. Daring combinations, such as tuna Rossini or iodised celery with plankton, reveal a delicious symphony of tastes, celebrating the richness of our marine environment. From steaming with seawater to conjuring sauces from marine flora, the way in which each flavour of the sea and its treasures is worked enhances the products of the land promising a gastronomic experience that is as ethical as it is delectable.

 

Sustainable, committed gastronomy
Awarded the "Prize for Ethical and Environmental Responsibility" by La Liste in 2023, Elsa embodies committed culinary excellence through an innovative vision of catering. A cuisine of conviction, delicacy and refinement, based on carefully sourced products chosen with respect for the environment and animal welfare in mind. True to its values, the restaurant is resolutely committed to sustainability and the preservation of marine resources, favouring fresh products from sustainable fishing, certified by the World Ocean Network of the Mr. Goodfish label. As for the plants, they come from the Domaine d'Agerbol, bathed in sunlight and located on the heights of Roquebrune Cap-Martin.

In the intimate setting of the Monte-Carlo Beach, Relais & Châteaux, Elsa is a jewel in the heart of the Riviera. Its elegant atmosphere, inspired by the chic of the 1930s revisited by interior designer India Mahdavi, offers an interlude in the Mediterranean art of living. The dining room is a marine immersion, where the azure tones delicately evoke the contours of the coast. The decor is bathed in blue and light, where time seems to stand still for a lunch or dinner. The vast terrace, with the sea as its only horizon, invites you to embark on a spellbinding sensory experience, lulled by the murmur of the waves and caressed by the sea breeze. A sunny lunch or dinner under the stars will be unforgettable in this summer paradise between the pine forests and the Mediterranean.

A fervent ambassador of the marine world, he defends “the artisans of the sea who live in symbiosis with this precious resource”. Admiring these geniuses who prefer boats without engines and without the smell of fuel oil so as not to disturb the marine fauna, he signs for Elsa a declaration of love to nature.
